Toppings
- 1 large lemon, thinly sliced and seeds removed
- 2 tablespoons olive oil, plus more for brushing
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup pitted Kalamata olives, sliced
- 1/4 cup finely chopped red onion
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat Grill: Preheat your barbecue grill to medium-high heat. Make sure the grates are clean and well-oiled to prevent sticking.
- Roll Out Dough: On a lightly floured surface, roll out the pizza dough into a 1/4-inch thick circle or rectangle, depending on your preference.
- Grill First Side: Brush one side of the dough with olive oil. Carefully place the oiled side down onto the grill grates. Close the grill lid and cook for 2-3 minutes until the underside is lightly charred and bubbly.
- Flip Dough: Brush the top side of the dough with olive oil, then flip the dough over using tongs to cook the other side.
- Season Dough: On the cooked side now on top, brush with olive oil and evenly sprinkle garlic powder and dried oregano for flavor.
- Add Toppings: Arrange the lemon slices, crumbled feta cheese, cherry tomatoes, Kalamata olives, and red onion evenly over the dough.
- Add Cheese and Season: Sprinkle shredded mozzarella on top of the toppings and season with salt and pepper to taste.
- Grill to Melt Cheese: Close the grill lid and cook for an additional 3-5 minutes until the cheese is melted and bubbly and the crust is cooked through.
- Remove Pizza: Using a large spatula, carefully remove the pizza from the grill.
- Garnish: Let the pizza cool for a minute, then garnish with fresh basil leaves for a fragrant finish.
- Serve: Slice the pizza and serve immediately, enjoying the vibrant Mediterranean flavors.
Notes
- Make sure the grill grates are well-oiled to prevent the dough from sticking.
- Adjust cooking times based on your grill’s temperature and dough thickness.
- If you prefer a more charred crust, extend grilling times slightly but watch carefully to avoid burning.
- Feel free to substitute fresh oregano for dried if available.
- Use ripe, firm cherry tomatoes for best texture on the pizza.
