Description

This vibrant and refreshing Watermelon Radish Toast features crisp watermelon radish slices layered on creamy herbed goat’s cheese spread over toasted sourdough bread. Drizzled with olive oil and topped with microgreens, it makes for a light, nutritious, and visually stunning snack or breakfast option.

Ingredients

Scale

For the Toast

  • 2 pieces sourdough bread
  • 1 watermelon radish, sliced into 1/4 inch pieces
  • 2 ounces herbed goat’s cheese
  • 2 teaspoons olive oil
  • pinch of flaky sea salt and pepper
  • sprinkle of microgreens

Instructions

  1. Toast the bread: Toast the 2 pieces of sourdough bread until golden and crisp to provide a perfect base for the toppings.
  2. Spread goat’s cheese and layer radish: Evenly spread 1 ounce of herbed goat’s cheese on each slice of toasted bread. Next, arrange the thinly sliced 1/4 inch watermelon radish evenly on top of the cheese.
  3. Season and garnish: Drizzle each toast with 1 teaspoon of olive oil. Then sprinkle a pinch of flaky sea salt and freshly ground pepper over the top. Finish by adding a light sprinkle of fresh microgreens for a pop of color and flavor.

Notes

  • Use a serrated knife to slice the watermelon radish thinly for best texture.
  • Herbed goat’s cheese can be substituted with plain goat cheese plus fresh herbs like chives or dill as a variation.
  • For added protein, consider adding a poached or fried egg on top.
  • Microgreens can be replaced with arugula or fresh basil leaves.
  • This recipe is best enjoyed immediately to retain toast crispness.
