- 6 pieces of watermelon, seeded and cut into 1 x 1 inch cubes, divided

- Dissolve Sugar: Place the superfine sugar and freshly squeezed lime juice in a collins or highball glass. Stir well until the sugar is completely dissolved, creating a sweet and tangy base for the cocktail.
- Muddle Ingredients: Add 3 watermelon cubes and 5 mint leaves into the glass. Gently muddle 3-4 times to release the juicy watermelon flavor and the aromatic oils from the mint without pulverizing the ingredients.
- Assemble the Cocktail: Fill the glass with ice cubes, then pour in 3 ounces of white rum. Top the drink with a generous splash of club soda or sparkling water to add fizz and lighten the cocktail. Gently stir to combine the flavors evenly.
