These easy Salmon Sushi Bake Cups are a fun and delicious twist on traditional sushi. Perfect for a party or a tasty snack, these bite-sized treats are sure to impress your guests.
Ingredients
Sushi Rice:
1 cup sushi rice, rinsed and cooked according to package instructions, 2 tablespoons rice vinegar, 1 tablespoon sugar, 1/2 teaspoon salt
Salmon Mixture:
1 cup cooked salmon (baked or canned), 2 tablespoons mayonnaise, 1 tablespoon sriracha, 1 teaspoon soy sauce
Additional Ingredients:
12 sheets of small square nori (seaweed), 1 avocado diced, 1/2 cucumber finely chopped, 1 tablespoon sesame seeds, 1 green onion thinly sliced, nonstick cooking spray or oil for greasing muffin tin
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a muffin tin. Mix sushi rice with vinegar, sugar, and salt. In a separate bowl, combine salmon, mayonnaise, sriracha, and soy sauce.
- Assemble: Place nori in each muffin cup, add seasoned rice, top with salmon mixture.
- Bake: Bake for 10–12 minutes until crisp. Top with avocado, cucumber, sesame seeds, and green onions.
Notes
- For a spicier version, increase the sriracha to 2 tablespoons.
- You can substitute cooked crab or tuna for the salmon.
- If your nori sheets are large, cut them into quarters to fit into standard muffin tins.
