- 4 cups vegetable or chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme

- Sauté Vegetables: Heat olive oil in a large pot over medium-high heat. Once hot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables soften and become fragrant.
- Add Garlic and Potatoes: Stir in the minced garlic and cook for 1 minute. Then add the halved baby potatoes, 1/2 teaspoon salt, 1/2 teaspoon dried thyme, and the vegetable or chicken broth. Cover the pot and bring the mixture to a boil. Once boiling, reduce the heat to medium and simmer, covered, for 10 minutes.
- Prepare Dumpling Dough: While the soup simmers, combine the all-purpose flour, baking powder, 3/4 teaspoon salt, and 1/4 teaspoon dried thyme in a bowl and mix well. Pour the melted butter and milk over the dry ingredients. Stir gently with a spatula until just combined; avoid overmixing to keep dumplings tender. Divide the dough evenly into 15-16 pieces.
