Meatballs:
- 1 1/2 pounds ground beef, 80/20 blend
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Sub Assembly:
- 2 cups marinara sauce
- 4 hoagie rolls or sub rolls
- 1 tablespoon butter, softened
- 1 teaspoon garlic powder
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (for topping)
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Prepare the meatballs: Combine ground beef, breadcrumbs, Parmesan cheese, garlic, egg, parsley, oregano, salt, and pepper. Shape into meatballs and bake for 18–20 minutes.
- Warm marinara sauce: Heat marinara sauce in a saucepan.
- Assemble the subs: Slice rolls, spread with garlic butter, toast, fill with meatballs and marinara, top with cheeses, and broil until melted.
