Description

These delicious Turkey Pockets are a perfect easy lunch or snack option featuring flaky puff pastry filled with savory deli turkey, melted cheese, and a tangy mayo-Dijon spread. Baked to golden perfection, these pockets offer a warm, satisfying meal that’s quick to prepare and kid-friendly.

Ingredients

Scale

Puff Pastry Assembly

  • 1 sheet of puff pastry, thawed
  • 6 slices of deli turkey breast
  • 4 slices of provolone or Swiss cheese

Spread

  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Finishing

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut it into 4 equal rectangles, which will serve as individual pockets.
  3. Make the Spread: In a small bowl, combine mayonnaise, Dijon mustard, garlic powder, salt, and pepper until smooth. This spread will add moisture and flavor inside the pockets.
  4. Assemble the Pockets: Spread a thin layer of the prepared mayo mixture over each puff pastry rectangle. Then place 1–2 slices of deli turkey and 1 slice of cheese on top of the spread.
  5. Seal the Pockets: Fold the pastry over to enclose the fillings, creating a pocket. Press the edges firmly and seal by crimping with a fork to prevent the filling from leaking out during baking.
  6. Apply Egg Wash: Brush the tops of each pocket with the beaten egg to give them a shiny, golden crust after baking.
  7. Bake: Place the pockets on the prepared baking sheet and bake for 18–22 minutes, or until the pastry is golden brown and puffed.
  8. Cool and Serve: Allow the pockets to cool slightly before serving to enjoy the flavors and prevent burning your mouth.

Notes

  • You can substitute puff pastry with crescent roll dough for a softer texture.
  • Add spinach, tomato slices, or sautéed onions inside the pockets for extra flavor and nutrition.
