Description

Delight in the classic flavors of summer with these Triple Berry Cobbler Bars, combining a buttery crust with a luscious mixed berry filling. Perfect for dessert or sweet snacks, these bars offer a delightful balance of tangy berries and a crumbly, golden topping.

Ingredients

Scale

Dough

  • 1 cup unsalted butter, melted, plus extra for greasing
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Berry Filling

  • 1 1/2 cups mixed berries (blueberries, raspberries, blackberries – fresh or frozen)
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan to prevent sticking.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, vanilla extract, and almond extract until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: Add the all-purpose flour, baking powder, and salt to the wet ingredients, mixing until a soft dough forms.
  4. Form Base Layer: Press two-thirds of the dough evenly into the bottom of the prepared baking pan, creating a firm and uniform crust.
  5. Prepare Berry Filling: In a separate bowl, gently toss the mixed berries with cornstarch, lemon juice, and 2 tablespoons of granulated sugar, ensuring the berries are well coated.
  6. Assemble Bars: Spread the berry mixture evenly over the dough base in the pan. Crumble the remaining dough over the berry layer, covering the berries partially to create a crumbly top.
  7. Bake: Place the pan in the oven and bake for 38 to 42 minutes, or until the top is golden brown and the berry filling is bubbling.
  8. Cool and Serve: Remove the bars from the oven and let them cool completely in the pan before slicing into 16 bars for serving.

Notes

  • Frozen berries can be used directly without thawing to prevent excess moisture.
  • Try swapping the mixed berries for strawberries or cherries to vary the flavor profile.
  • For a crispier topping, broil the bars for the last 2–3 minutes of baking, watching carefully to avoid burning.
