Ingredients
Scale
Dough
- 1 cup unsalted butter, melted, plus extra for greasing
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Berry Filling
- 1 1/2 cups mixed berries (blueberries, raspberries, blackberries – fresh or frozen)
- 1 tablespoon cornstarch
- 2 tablespoons lemon juice
- 2 tablespoons granulated sugar (for topping)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan to prevent sticking.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, vanilla extract, and almond extract until the mixture is smooth and well combined.
- Combine Dry Ingredients: Add the all-purpose flour, baking powder, and salt to the wet ingredients, mixing until a soft dough forms.
- Form Base Layer: Press two-thirds of the dough evenly into the bottom of the prepared baking pan, creating a firm and uniform crust.
- Prepare Berry Filling: In a separate bowl, gently toss the mixed berries with cornstarch, lemon juice, and 2 tablespoons of granulated sugar, ensuring the berries are well coated.
- Assemble Bars: Spread the berry mixture evenly over the dough base in the pan. Crumble the remaining dough over the berry layer, covering the berries partially to create a crumbly top.
- Bake: Place the pan in the oven and bake for 38 to 42 minutes, or until the top is golden brown and the berry filling is bubbling.
- Cool and Serve: Remove the bars from the oven and let them cool completely in the pan before slicing into 16 bars for serving.
Notes
- Frozen berries can be used directly without thawing to prevent excess moisture.
- Try swapping the mixed berries for strawberries or cherries to vary the flavor profile.
- For a crispier topping, broil the bars for the last 2–3 minutes of baking, watching carefully to avoid burning.
