Instructions
- Prepare Chocolate Mixture: Place the coffee, 1/4 cup of heavy whipping cream, and chopped dark chocolate into a small saucepan over medium heat. Stir continuously until the chocolate has melted completely and the mixture is smooth. Remove from heat and allow it to cool for 5 to 8 minutes.
- Whip Cream and Mascarpone: Meanwhile, add the mascarpone, remaining 1 cup of heavy whipping cream, and icing sugar into a chilled stainless steel bowl. Whip the mixture just until very soft peaks form, taking care not to overbeat at this stage.
- Combine Mixtures: Gradually beat the cooled chocolate mixture into the whipped mascarpone mixture on high speed until the mousse is fluffy and holds stiff peaks. Avoid overbeating as it may cause the mousse to split.
- Chill the Mousse: Spoon the mousse into four ramekins or jars, each with a 6-ounce capacity. Refrigerate for at least 20 minutes or up to a few hours to allow the mousse to set.
- Serve: Garnish each serving with extra whipped cream, chocolate shavings, a dusting of cocoa powder, and ladyfinger cookies on the side. Enjoy chilled. The mousse will keep in the refrigerator for 1 to 2 days.
