Description

These Thai Peanut Chicken Lettuce Wraps combine tender marinated chicken thighs sautéed with fresh veggies and topped with a savory peanut sauce, peanuts, and cilantro, all wrapped in crisp baby butter lettuce for a light and flavorful meal perfect for a quick dinner or appetizer.

Ingredients

Scale

Peanut Sauce

  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 2 tablespoons oyster sauce
  • 1 ½ tablespoons chili garlic sauce
  • 1 tablespoon ground ginger
  • 1 tablespoon honey
  • 2 tablespoons water
  • 1 tablespoon rice vinegar
  • Juice of 1 lime

Chicken and Assembly

  • 8 boneless skinless chicken thighs, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 4 green onions, sliced
  • ½ cup shredded carrots
  • ½ cup chopped peanuts
  • ½ cup chopped cilantro, plus extra for garnish
  • 12 baby butter lettuce leaves
  • 6 lime wedges

Instructions

  1. Prepare the Peanut Sauce: In a medium bowl, thoroughly stir together soy sauce, peanut butter, oyster sauce, chili garlic sauce, ground ginger, honey, water, rice vinegar, and lime juice until smooth. Set aside 2/3 cup of the sauce; reserve 1/3 cup for marinating the chicken.
  2. Marinate the Chicken: Place the cut chicken thighs in a small bowl and add 1/3 cup of the prepared peanut sauce. Stir well to coat all pieces evenly. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow flavors to meld.
  3. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the marinated chicken chunks and sauté for 5-7 minutes, stirring occasionally to brown and cook the chicken thoroughly.
  4. Add Vegetables: Stir in the shredded carrots and sliced green onions with the chicken. Continue to cook for about 5 minutes more, until the chicken is cooked through and the vegetables are tender-crisp.
  5. Finish: Remove the skillet from heat and mix in the chopped peanuts and cilantro for added texture and fresh flavor.
  6. Assemble and Serve: Spoon the chicken mixture into baby butter lettuce leaves to create wraps. Serve immediately, garnished with extra cilantro, lime wedges, and additional peanut sauce on the side for dipping.

Notes

  • Marinating the chicken longer than 30 minutes enhances flavor and tenderness.
  • Use green chili garlic sauce for a milder heat level if preferred.
  • Substitute chicken breast if you prefer leaner meat, but cooking time may vary.
  • For a gluten-free option, use gluten-free soy sauce and oyster sauce substitutes.
  • Wraps can be served with additional fresh herbs like mint or basil for extra freshness.
