- Prepare the Peanut Sauce: In a medium bowl, thoroughly stir together soy sauce, peanut butter, oyster sauce, chili garlic sauce, ground ginger, honey, water, rice vinegar, and lime juice until smooth. Set aside 2/3 cup of the sauce; reserve 1/3 cup for marinating the chicken.
- Marinate the Chicken: Place the cut chicken thighs in a small bowl and add 1/3 cup of the prepared peanut sauce. Stir well to coat all pieces evenly. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow flavors to meld.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the marinated chicken chunks and sauté for 5-7 minutes, stirring occasionally to brown and cook the chicken thoroughly.
- Add Vegetables: Stir in the shredded carrots and sliced green onions with the chicken. Continue to cook for about 5 minutes more, until the chicken is cooked through and the vegetables are tender-crisp.
- Finish: Remove the skillet from heat and mix in the chopped peanuts and cilantro for added texture and fresh flavor.
- Assemble and Serve: Spoon the chicken mixture into baby butter lettuce leaves to create wraps. Serve immediately, garnished with extra cilantro, lime wedges, and additional peanut sauce on the side for dipping.
