Instructions
- Prepare the Cookie Crumbs: Crumble about 8-10 baked sugar cookies into fine crumbs using a food processor or by hand in a large bowl.
- Mix the Truffle Base: In a medium bowl, combine the sugar cookie crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix thoroughly until the mixture is smooth, creamy, and comes together in a dough-like consistency.
- Form the Truffles: Using your hands or a small cookie scoop, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet or tray.
- Chill the Balls: Refrigerate the rolled balls for at least 30 minutes to firm them up before coating.
- Melt the White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 20-30 second intervals, stirring well between each until smooth and fully melted.
