- 1/4 cup powdered sugar

- 1/2 cup heavy cream
Topping:
- 1 lb fresh strawberries (hulled and halved)
- 1/4 cup apricot jam (warmed and strained for glaze)
Instructions
- Prepare the Crust: Preheat the oven to 375°F. Combine flour, sugar, and salt. Cut in butter until mixture resembles crumbs. Add egg yolk and water, mix until dough forms. Press into tart pan, prick with fork, chill, then bake.
- Make the Filling: Beat cream cheese, sugar, and vanilla until smooth. Whip cream to stiff peaks, fold into cream cheese mixture.
- Assemble the Tart: Spread filling on cooled crust, arrange strawberries on top. Brush with apricot jam.
- Chill and Serve: Chill tart for at least 1 hour before serving.
