Description

A delightful Strawberry Upside Down Cake featuring fresh strawberries and strawberry jello topped with mini marshmallows and a light white cake batter, baked to golden perfection for a moist, flavorful dessert that offers a fun twist on the traditional upside down cake.

Ingredients

Scale

Cake Batter

  • 1 white cake mix (prepared according to box directions)

Fruit Topping

  • 2 cups strawberries, chopped
  • 6 ounces strawberry jello (dry mix)

Topping

  • 3 cups mini marshmallows (miniature)

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to ensure it reaches the perfect baking temperature while you prepare your ingredients.
  2. Prepare Cake Batter: Follow the instructions on your white cake mix box to prepare the batter, then set it aside for assembling.
  3. Arrange Strawberries: Grease a 9×13 inch baking dish lightly, then spread the chopped strawberries evenly on the bottom of the dish.
  4. Add Jello Mix: Sprinkle the dry strawberry jello mix evenly over the strawberries to infuse flavor and sweetness into the fruit layer.
  5. Layer Marshmallows: Distribute 3 cups of mini marshmallows evenly on top of the jello and strawberry layer; these will melt and create a gooey topping.
  6. Pour Cake Batter: Carefully pour the prepared cake batter over the marshmallow layer, spreading it evenly without mixing the layers together.
  7. Bake: Place the baking dish in the preheated oven and bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Flip: Let the cake cool in the pan for 20 minutes. Then, run a knife carefully around the edges to loosen it and invert the cake onto a serving tray to reveal the strawberry and marshmallow topping.

Notes

  • Ensure the baking dish is well greased to prevent sticking when flipping the cake.
  • Chopping the strawberries into uniform pieces helps them layer evenly and cook through nicely.
  • Use a toothpick to check doneness before removing the cake to avoid under or over baking.
  • Allowing the cake to cool slightly before flipping reduces the risk of the topping sliding off.
  • This cake is best served slightly warm or at room temperature for optimal flavor and texture.
