Description

This Strawberry Goat Cheese Bruschetta is a delightful appetizer combining the creamy tang of goat cheese and cream cheese with the fresh sweetness of strawberries and a hint of honey. Toasted baguette slices provide a perfect crispy base, while fresh basil and white balsamic vinegar add brightness and depth to each bite. Ideal for summer gatherings and elegant parties, this recipe is easy to prepare and sure to impress your guests.

Ingredients

Scale

For the Bruschetta Base

  • 1 baguette, cut into 3/4″ slices
  • 2 tablespoons olive oil

For the Cheese Spread

  • 8 ounces goat cheese, softened
  • 3 ounces cream cheese, softened
  • 2 tablespoons honey

For the Topping

  • 1 pound strawberries, chopped
  • 3 tablespoons white balsamic vinegar
  • Fresh basil leaves, chopped
  • Flaky sea salt
  • Freshly ground black pepper

Instructions

  1. Preheat and Prepare Baking Sheets: Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper to prevent sticking and for easy cleanup.
  2. Toast the Baguette Slices: Arrange the 3/4″ sliced baguette pieces on the prepared baking sheets. Brush each slice generously with olive oil. Bake in the preheated oven for 8-10 minutes or until the slices are lightly browned and just toasted. Remove the baking sheets and allow the bread to cool completely.
  3. Make the Cheese Mixture: In a food processor bowl, combine the softened goat cheese, cream cheese, and honey. Process until the mixture is smooth and creamy, stopping occasionally to scrape down the sides for an even blend. Transfer the cheese spread to a separate bowl to make it easier to spread.
  4. Prepare the Strawberry Topping: In a medium-sized bowl, stir together the chopped strawberries and white balsamic vinegar. This will create a tangy-sweet topping that complements the creamy cheese base.
  5. Assemble the Bruschetta: Spread a generous layer of the cheese mixture onto each toasted baguette slice. Top each with a spoonful of the strawberry mixture. Sprinkle with plenty of freshly chopped basil leaves, flaky sea salt, and freshly ground black pepper to taste.
  6. Serve Immediately: Arrange the finished bruschetta on a serving platter and serve right away to enjoy the perfect balance of crispy, creamy, sweet, and tangy flavors at their freshest.

Notes

  • Make sure the cheeses are fully softened before blending for a smooth spread.
  • Use fresh, ripe strawberries for the best flavor and vibrant color.
  • White balsamic vinegar adds a delicate sweetness without overpowering the strawberries.
  • To save time, cut the bread and prepare ingredients ahead but assemble just before serving to keep the bread crispy.
  • For a dairy-free version, omit the cheeses and substitute with a vegan cream cheese alternative.
  • This bruschetta tastes best served immediately to maintain the crisp texture of the toasted baguette.
