Instructions

  1. Prepare the Strawberries: Wash and hull the strawberries, then crush them thoroughly using a potato masher or food processor, being careful not to purée.
  2. Mix with Sugar: Measure exactly 2 cups of crushed strawberries into a large bowl. Add the sugar and stir until well combined. Let the mixture sit for 10 minutes, stirring occasionally.
  3. Prepare Pectin Mixture: In a small saucepan, combine the powdered pectin and water. Bring to a boil over medium-high heat, stirring constantly. Boil for 1 minute, then remove from heat.
  4. Combine Mixtures: Immediately stir the hot pectin mixture into the strawberry mixture. Stir continuously for 3 minutes until the sugar is mostly dissolved.
  5. Store the Jam: Ladle the jam into clean, freezer-safe containers, leaving about 1/2 inch of headspace. Seal tightly with lids. Let sit at room temperature for 24 hours, then store in the freezer for up to 1 year.
