Ingredients
Scale
Meat & Marinade
- 1 pound flank steak
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Vegetables & Cheese
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Other
- 4 large flour tortillas
- 2 cups frozen French fries
- 1 tablespoon butter
- 1 tablespoon sour cream
- 1 tablespoon fresh cilantro, chopped
Instructions
- Bake French Fries: Preheat your oven to 425°F (220°C). Spread the frozen French fries on a baking sheet and bake for 20-25 minutes until crispy, then set aside.
- Marinate Steak: Rub the flank steak with olive oil, salt, black pepper, garlic powder, and onion powder. Let it marinate for at least 10 minutes to absorb the flavors.
- Sear Steak: Heat a large skillet over medium-high heat. Add the marinated flank steak and sear each side for 3-4 minutes or until it reaches your preferred doneness. Remove from heat, let it rest for a few minutes, then slice thinly against the grain for maximum tenderness.
- Sauté Vegetables: In the same skillet, melt the butter over medium heat. Add sliced onions and bell peppers, sautéing until they become soft and slightly caramelized, adding depth of flavor.
- Warm Tortillas: Heat the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable and easier to fold.
- Assemble Burritos: Lay each tortilla flat and place a few pieces of sliced steak in the center. Add a portion of baked French fries, caramelized onions, and bell peppers. Generously sprinkle with shredded cheddar and mozzarella cheese.
- Wrap Burritos: Fold the sides of the tortilla over the filling, then roll it up tightly to enclose all ingredients securely into a burrito shape.
- Heat Burritos: Place the burritos seam-side down on a skillet or clean baking sheet. Heat on a skillet over medium heat or in an oven preheated to 350°F (175°C) for 5-10 minutes, until the cheese inside melts and the burritos are heated through.
- Serve: Serve hot with a dollop of sour cream and a sprinkle of fresh cilantro on top for added freshness and creaminess.
Notes
- Letting the steak rest after cooking helps retain juiciness and ensures tender slices.
- Baking the fries until crispy provides a better texture inside the burrito.
- You can substitute cheddar and mozzarella with other cheese blends if preferred.
- For a spicier version, add some sliced jalapeños or hot sauce inside the burrito.
- Use warmed tortillas to prevent tearing while folding.
- The burritos can be made ahead of time and reheated, but fresh heat-up ensures melty cheese and crisp edges.
