This Slow Cooker Cowboy Casserole is a hearty and comforting meal that is perfect for busy weeknights. With layers of ground beef, beans, corn, and potatoes, all cooked together in a savory sauce and topped with melted cheese, this dish is sure to be a family favorite.

Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Beans and Veggies:
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
Sauce and Seasonings:
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Additional Ingredients:
- 3 cups frozen diced potatoes (hash browns)
- 1 1/2 cups shredded cheddar cheese
- Chopped fresh parsley for garnish (optional)
Instructions
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until browned. Add onion and garlic, sauté until softened, about 3–4 minutes. Drain excess fat.
- Combine Ingredients: Transfer beef mixture to slow cooker. Add beans, corn, tomatoes, soup, broth, seasonings. Stir to combine. Spread potatoes over mixture.
- Cook in Slow Cooker: Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Add Cheese: Before serving, sprinkle cheddar cheese over the top, cover and let melt. Garnish with parsley.
Notes
- You can swap ground beef for turkey or chicken.
- For added heat, include jalapeño or cayenne.
- Serve with cornbread or a green salad.
