Description

This Slow Cooker Cowboy Casserole is a hearty and comforting meal that is perfect for busy weeknights. With layers of ground beef, beans, corn, and potatoes, all cooked together in a savory sauce and topped with melted cheese, this dish is sure to be a family favorite.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

Beans and Veggies:

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles

Sauce and Seasonings:

  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Additional Ingredients:

  • 3 cups frozen diced potatoes (hash browns)
  • 1 1/2 cups shredded cheddar cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook Ground Beef: In a skillet over medium heat, cook the ground beef until browned. Add onion and garlic, sauté until softened, about 3–4 minutes. Drain excess fat.
  2. Combine Ingredients: Transfer beef mixture to slow cooker. Add beans, corn, tomatoes, soup, broth, seasonings. Stir to combine. Spread potatoes over mixture.
  3. Cook in Slow Cooker: Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  4. Add Cheese: Before serving, sprinkle cheddar cheese over the top, cover and let melt. Garnish with parsley.

Notes

  • You can swap ground beef for turkey or chicken.
  • For added heat, include jalapeño or cayenne.
  • Serve with cornbread or a green salad.
