Description

A flavorful and easy-to-make saucy ramen noodle dish combining tender vegetables, a savory homemade sauce, and perfectly cooked instant noodles, enhanced with fresh herbs and optional crunchy peanuts for texture.

Ingredients

Scale

Noodles

  • 2 packs instant ramen noodles (without seasoning)

Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon brown sugar

Aromatics & Vegetables

  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1 carrot, julienned
  • 1/2 cup sliced mushrooms

Additional

  • 1/4 cup peanuts, crushed (optional)
  • 2 tablespoons vegetable oil

Instructions

  1. Cook Noodles: Cook the ramen noodles according to the package instructions until tender, then drain them thoroughly and set aside. Discard the seasoning packets or save them for another use.
  2. Prepare Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sriracha, and brown sugar until the mixture is smooth and well combined. Set aside.
  3. Sauté Aromatics: Heat vegetable oil in a large skillet over medium heat. Add minced garlic and ginger, and cook for about 1 minute until fragrant but not browned.
  4. Cook Vegetables: Add the sliced mushrooms and julienned carrots to the skillet. Sauté for 3 to 4 minutes or until the vegetables are tender and slightly softened.
  5. Combine Noodles and Vegetables: Add the cooked ramen noodles into the skillet with the vegetables, stirring gently to mix well and heat through.
  6. Add Sauce: Pour the prepared sauce over the noodles and vegetables. Toss thoroughly so everything is evenly coated and heated through, about 2 minutes.
  7. Finish with Herbs: Remove the skillet from heat, then stir in the sliced green onions and chopped cilantro for fresh flavor and color.
  8. Garnish and Serve: Optionally sprinkle crushed peanuts over the top for added crunch and serve the saucy ramen noodles hot.

Notes

  • Adjust sriracha quantity to control the spiciness to your preference.
  • You can substitute oyster sauce with mushroom stir-fry sauce for a vegetarian version.
  • Adding other vegetables like bell peppers or snap peas can enhance the dish’s nutrition and color.
  • For a gluten-free version, use gluten-free soy sauce and noodles.
  • Crushed peanuts add a nice texture but can be omitted for nut-free diets.
