Description

This Rotisserie Chicken BBQ Flatbread recipe combines the smoky flavor of grilled flatbreads with the tangy sweetness of BBQ sauce, tender shredded rotisserie chicken, creamy goat cheese, and fresh radishes, finished with peppery baby arugula and a balsamic vinegar drizzle. Perfect for a quick and flavorful meal that serves four.

Ingredients

Scale

Flatbread

  • 1 batch pizza dough (homemade or store-bought)

Toppings

  • Shredded rotisserie chicken – about 2 cups
  • BBQ sauce (Sweet Baby Ray’s Sweet Vidalia Onion recommended) – 1/2 cup
  • Goat cheese, crumbled – 1/2 cup
  • Radishes, thinly sliced – 6 to 8 radishes
  • Baby arugula – 1 cup
  • Balsamic vinegar (optional) – 1 to 2 tablespoons

Instructions

  1. Prepare the Grill: Set up your grill for indirect cooking over medium heat, ensuring the temperature is moderate for even cooking without burning.
  2. Shape the Dough: Divide the pizza dough into four equal pieces. Press and stretch each piece into a flatbread shape about 1/4 inch thick.
  3. Grill the Flatbreads: Place flatbreads on the grill grates directly and cook until the underside is browned and crisp, about 3-4 minutes.
  4. Add Toppings: Remove flatbreads from direct heat and spread a generous layer of BBQ sauce over each. Top evenly with shredded chicken, crumbled goat cheese, and thinly sliced radishes.
  5. Finish Cooking: Return the flatbreads to the grill, using indirect heat to melt the goat cheese and heat through the toppings without burning, about 3-4 minutes.
  6. Add Fresh Greens and Serve: Remove flatbreads from the grill, top with fresh baby arugula, and drizzle with balsamic vinegar if desired. Serve immediately and enjoy!

Notes

  • Use medium heat on the grill to avoid burning the dough while melting cheese.
  • If you don’t have a grill, you can cook the flatbreads in a hot skillet or bake them in a preheated 450°F oven for a crisp base.
  • Balsamic vinegar is optional but adds a nice acidic contrast to balance the rich cheese and BBQ sauce.
  • Leftover rotisserie chicken works perfectly and adds convenience to this recipe.
  • For a spicier kick, add sliced jalapeños or a sprinkle of red pepper flakes before finishing cooking.
