Potatoes and Seasoning

  • 3 lbs small red potatoes, cut into 1/4″ thick rings

  • 2 Tbsp minced fresh parsley (or 1/2 Tbsp dried parsley)

Sausage

  • 1 lb kielbasa or sausage, cut into 3/4″ thick rings (Polish kielbasa recommended)


Instructions

  1. Preheat the Oven and Prepare Potatoes: Preheat your oven to 400°F (200°C). Wash and slice the small red potatoes into 1/4 inch thick rings to ensure even cooking and crispy edges.
  2. Season Potatoes: In a large mixing bowl, toss the sliced potatoes with 2 tablespoons of extra light olive oil, 1 teaspoon of sea salt, pressed garlic cloves, and minced fresh parsley until they are evenly coated with the seasonings.
  3. Arrange Potatoes for Roasting: Lay the seasoned potatoes in a single layer on a large rimmed baking sheet or roasting pan to ensure even roasting and maximum crispness.
  4. Add Kielbasa: Scatter the kielbasa slices on top of the potatoes, distributing them evenly to allow flavors to meld during roasting.
  5. Roast the Dish: Place the pan in the preheated oven and roast for 45-50 minutes, flipping the sausage and potatoes halfway through to promote even browning and a crispy texture.
  6. Finish and Serve: Remove the pan from the oven once the potatoes are golden and tender and the kielbasa is nicely browned. Garnish with extra parsley if desired and serve hot for a comforting one-pan meal.
