- 4 oz goat cheese, crumbled
- 1/4 cup grated Parmesan cheese

Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to ensure it is fully heated before roasting.
- Prepare the vegetables: Place cauliflower florets and halved cherry tomatoes on a large baking sheet. Drizzle with olive oil and sprinkle over the garlic powder, dried oregano, salt, and black pepper. Toss everything well to coat the vegetables evenly with the oil and seasonings, then spread out into a single layer.
- Roast vegetables: Roast for 25 to 30 minutes in the oven, stirring once halfway through cooking. The cauliflower should be golden and tender, and the tomatoes slightly blistered when done.
- Assemble casserole: Transfer the roasted vegetables to a lightly greased 9×9-inch baking dish. Evenly sprinkle the crumbled goat cheese and grated Parmesan cheese over the top.
- Bake the casserole: Return the dish to the oven and bake an additional 10 minutes, until the cheeses are melted and bubbly.
