- Brown the Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned on both sides, about 3-4 minutes. Remove the beef from the skillet and set aside.
- Sauté Onions: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the chopped onion and cook until softened and translucent, about 5 minutes.
- Cook Mushrooms and Garlic: Stir in the minced garlic and sliced mushrooms. Cook until the mushrooms are tender and browned, about 5-7 minutes.
- Make the Sauce: Sprinkle the flour over the mushroom mixture and stir well to coat. Gradually add the beef broth, stirring continuously until a thick sauce forms.
- Add Cream and Mustard: Reduce the heat to low and stir in the sour cream and Dijon mustard. Season with salt and pepper to taste.

- Cook Noodles: In a separate pot, cook the egg noodles according to package instructions. Drain and toss with 2 tablespoons of butter.
