Instructions

  1. Prepare the Pumpkin Mixture: In a medium saucepan, combine the butter, softened cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice.
  2. Cook and Thicken: Stir the mixture over medium heat until well combined and thickened, about 5 to 7 minutes.
  3. Add White Chocolate and Graham Cracker Crumbs: Stir in the white chocolate chips and graham cracker crumbs until the chocolate melts and the mixture becomes smooth.
  4. Color and Thicken Further: Add orange food coloring if desired, and continue stirring until the mixture thickens more and pulls away from the sides of the pan.
  5. Chill the Mixture: Transfer the mixture to a greased baking sheet and spread it evenly. Refrigerate until firm, at least 2 hours or overnight.
  6. Shape the Truffles: Once firm, coat your hands with butter to prevent sticking and roll the mixture into small balls.
