Ingredients
Scale
Main Ingredients
- 6 cups Rice Krispies cereal
- 1 package (10 oz.) marshmallows
- 1/4 cup canned pumpkin puree
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
Optional Ingredients
- 1/2 cup white chocolate chips or candy melts
- Orange food coloring
- Green food coloring
Instructions
- Prepare the Baking Dish: Grease a 9×13 inch baking dish with butter or line it with parchment paper to prevent the treats from sticking and allow easy removal.
- Melt Butter and Marshmallows: In a large pot over low heat, melt the unsalted butter. Once melted, add the marshmallows and continuously stir until they have completely melted and the mixture is smooth.
- Add Pumpkin Flavoring: Stir in the canned pumpkin puree, vanilla extract, and pumpkin pie spice. Mix thoroughly until all ingredients are fully combined and the mixture is uniform in color and texture.
- Add Optional Orange Coloring: If desired, add a few drops of orange food coloring to the marshmallow mixture to achieve a vibrant pumpkin-orange hue. Stir well to incorporate the color evenly.
- Combine with Cereal: Quickly add the Rice Krispies cereal into the marshmallow mixture. Gently stir to coat all the cereal evenly with the pumpkin marshmallow mixture, ensuring a consistent texture throughout.
- Transfer to Baking Dish: Using a spatula or greased hands, transfer the mixture into the prepared baking dish. Press the mixture down firmly and evenly to form a compact layer.
- Allow to Set: Let the treats cool and set at room temperature for approximately 30 minutes until firm enough to cut.
- Prepare Optional White Chocolate Drizzle: If using the white chocolate chips or candy melts, melt them according to package directions. For a festive look, stir in a drop or two of green food coloring to tint the chocolate. Drizzle the green chocolate over the cooled treats as decoration.
- Cut and Serve: Once fully set, cut the Rice Krispies treats into squares and serve.
Notes
- Pressing the mixture firmly into the baking dish helps the treats hold together well when cut.
- Use greased hands or a spatula to avoid the sticky mixture from adhering to your hands.
- Adjust the amount of pumpkin pie spice based on your flavor preference for more or less spice.
- The optional white chocolate drizzle adds visual appeal and a sweet contrast but can be omitted for simplicity.
- Store treats in an airtight container at room temperature for up to 3 days for best freshness.
