  • 1 scoop (about 30g) vanilla protein powder
  • 2 tablespoons coconut flour
  • 2 tablespoons maple syrup
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon coconut oil (melted)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Filling and Glaze:

  • 4 tablespoons strawberry or raspberry chia jam
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon maple syrup (for glaze)
  • 1 tablespoon almond milk (for glaze)


Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare Dough: In a bowl, mix oat flour, protein powder, coconut flour, baking powder, and salt. Add maple syrup, almond milk, melted coconut oil, and vanilla extract; form a dough. Roll out and cut into rectangles.
  3. Assemble: Place jam on half the rectangles, top with remaining rectangles, and seal edges with a fork. Bake for 10–12 minutes until golden.
  4. Make Glaze: Mix Greek yogurt, maple syrup, and almond milk. Spread over cooled pop tarts.
