Soup:
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 3 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 6 cups low-sodium chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon chili garlic sauce (optional)
Add-Ins:
- 12–16 frozen potstickers or dumplings (pork, chicken, or vegetable)
- 1 cup shredded carrots
- 2 cups baby spinach
- 2 green onions (sliced)
- Salt and pepper to taste
Instructions
- Heat oils: In a large pot, heat sesame oil and olive oil over medium heat.
- Sauté aromatics: Add diced onion, sauté until translucent. Stir in garlic and ginger, cook until fragrant.
- Add broth and seasonings: Pour in chicken broth, soy sauce, rice vinegar, and chili garlic sauce. Bring to a boil.
- Cook potstickers: Add frozen potstickers and shredded carrots, simmer until potstickers are heated through.
- Finish soup: Stir in baby spinach until wilted. Season with salt and pepper.
- Serve: Ladle into bowls, garnish with green onions.
Notes
- You can use any variety of frozen dumplings—pork, chicken, shrimp, or vegetarian.
- For a vegetarian version, use vegetable broth and meatless potstickers. Add extra veggies like mushrooms, bok choy, or zucchini.
