For the Pork:
- 2 pork tenderloins (pork fillets), 500g / 1lb each
- 1 1/2 tbsp olive oil (or butter)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Sauce:
- 3 garlic cloves, very finely chopped
- 3 tbsp cider vinegar
- 1 1/2 tbsp soy sauce, light or all purpose
- 1/2 cup honey (or maple syrup)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for roasting the pork.
- Make the Sauce: In a bowl, mix together the garlic, cider vinegar, soy sauce, and honey until well combined to create the honey garlic sauce.
- Prepare the Rub: Combine garlic powder, paprika, salt, and black pepper, then sprinkle this seasoning mix evenly over the pork tenderloins.
- Sear the Pork: Heat olive oil in a large ovenproof skillet over high heat. Add the pork tenderloins and sear them on all sides until golden brown, about 2-3 minutes per side.
- Cook the Garlic: When the pork is almost fully seared, push it to the side of the skillet and add the finely chopped garlic. Cook the garlic until it turns golden and fragrant, about 1 minute.
- Add Sauce and Transfer to Oven: Pour the prepared sauce into the skillet. Turn the pork once to coat in the sauce, then immediately transfer the skillet to the preheated oven.
- Roast the Pork: Roast the pork in the oven for 15 to 18 minutes, or until the internal temperature reaches 68°C (155°F) for medium doneness.
- Rest the Pork: Remove the pork from the oven, transfer it to a plate, and cover loosely with foil. Let it rest for 5 minutes to allow the juices to redistribute.
- Reduce the Sauce: Place the skillet with the sauce back on the stove over medium-high heat. Simmer rapidly for 3 minutes until the liquid reduces down to a thin syrup consistency.
- Coat Pork in Sauce: Remove from heat. Return the pork to the skillet and turn it to coat evenly in the reduced honey garlic sauce.
- Serve: Slice the pork into thick pieces and serve with the remaining sauce spooned over the top.
