Ingredients
Scale
Base Ingredients
- 3 Tablespoons unsalted butter
- 6 ½ cups mini marshmallows (divided)
- ½ cup creamy peanut butter
- ½ teaspoon vanilla extract
- 6 cups Rice Krispies cereal
- 1/4 teaspoon kosher salt
Instructions
- Prepare the Pan: Lightly grease a 9×9-inch pan with nonstick spray or line it with parchment paper for easy release. Set aside.
- Melt Butter: Melt the butter in a large pot over low heat, stirring occasionally to avoid burning.
- Melt Marshmallows: Add 5 ½ cups of mini marshmallows to the melted butter. Stir constantly until the marshmallows are fully melted and smooth.
- Add Flavorings: Remove the pot from heat and stir in the peanut butter, vanilla extract, and kosher salt until fully combined and smooth.
- Mix in Cereal: Gradually fold in the Rice Krispies cereal, mixing gently to coat all the cereal evenly with the marshmallow mixture.
- Add Whole Marshmallows: Fold in the remaining 1 cup of mini marshmallows carefully, so they maintain their shape in the treats.
- Transfer and Press: Pour the mixture into the prepared pan and press it into an even layer using a greased spatula or lightly buttered hands. Avoid pressing too hard to keep the treats light and fluffy.
- Set and Slice: Let the treats cool at room temperature for 1-2 hours or chill in the refrigerator for 30-40 minutes to set faster. Once firm, cut into 12 squares and serve.
Notes
- For easier handling, lightly grease your spatula or hands when pressing the mixture into the pan.
- Using the remaining marshmallows whole adds a fun chewy texture contrast.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- You can substitute creamy peanut butter with another nut or seed butter if preferred.
- To make smaller or larger bars, adjust the pan size and cutting accordingly.
