Main Ingredients
- 1 cup plain Greek yogurt
- 1/2 cup creamy peanut butter
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
Add-ins
- 1/4 cup mini chocolate chips
- 1/4 cup chopped peanuts (optional)
Instructions
- Mix the Base: In a medium mixing bowl, combine the plain Greek yogurt, creamy peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir thoroughly until the mixture is smooth and well incorporated.
- Fold in Add-ins: Gently fold the mini chocolate chips and chopped peanuts (if using) into the yogurt mixture, ensuring even distribution without breaking the chips or nuts.
- Prepare for Freezing: Spoon the mixture evenly into silicone molds or mini muffin liners, filling each cavity carefully to create uniform bites.
- Freeze: Place the molds in the freezer and allow them to freeze for at least 2 hours or until fully set and firm.
- Store and Serve: Once frozen, remove the bites from the molds and transfer them to an airtight container for freezer storage. Before serving, let them sit at room temperature for 2 to 3 minutes for the best texture.
Notes
- You can substitute almond butter or sunflower seed butter to make a peanut-free version suitable for allergies.
- For extra crunch, sprinkle granola on top before freezing the bites.
