Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream Butter and Cheese: In a large bowl, beat the softened butter, cream cheese, and sugar until light and fluffy.
  4. Add Eggs and Flavor: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Incorporate Peaches: Toss the diced peaches with 1 tablespoon of flour, then gently fold them into the batter.
  7. Bake: Pour the batter into the prepared loaf pan, smooth the top, and sprinkle coarse sugar if desired. Bake for 55–65 minutes until a toothpick inserted comes out clean.
