Instructions
- Sauté Onions: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 5 minutes.
- Add Garlic and Vegetables: Add the minced garlic, diced carrot, and diced bell pepper to the pot. Cook for an additional 4–5 minutes, stirring occasionally until the vegetables begin to soften.
- Season: Stir in the dried Italian seasoning and cook for another minute to release the flavors.
- Add Broth and Tomatoes: Pour in the vegetable broth and add the canned diced tomatoes, including their juice. Stir to combine and bring to a gentle simmer.
- Cook Ravioli: Once the soup is simmering, carefully add the ravioli to the pot. Cook according to package instructions, usually around 4–6 minutes if using fresh ravioli, or 6–8 minutes for frozen ravioli. Stir occasionally to prevent sticking.
- Add Spinach: About 2 minutes before the ravioli are done, stir in the chopped spinach, allowing it to wilt.
- Season to Taste: Taste the soup and season with salt and pepper as needed.
