Instructions
- Mix Ingredients: In a large bowl, combine shredded coconut, powdered sugar, cream cheese, and vanilla extract. Form a thick dough.
- Shape Balls: Form 1-inch balls from the mixture and place on a parchment-lined sheet. Freeze for 20–30 minutes.
- Melt Chocolate: Melt white chocolate chips in the microwave, stirring until smooth. Add coconut oil if desired.
