Description

A hearty and flavorful Nachos Pie layered with seasoned ground beef, beans, tortillas, cheese, and topped with fresh avocado and salsa. This easy-to-make baked dish combines all the favorite nacho ingredients into a delicious pie that’s perfect for family dinners or casual gatherings.

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced (brown, yellow, or white)
  • 2 garlic cloves, minced
  • 13 oz / 400 g lean ground/mince beef
  • 1 oz / 28 g packet Taco Seasoning (or use homemade taco seasoning)
  • 1/2 tsp black pepper
  • 700 g / 24 oz tomato passata or pureed canned tomatoes
  • 1/2 cup water
  • 14 oz / 400 g canned red kidney beans, drained
  • 3 – 4 soft tortillas (flour or corn, for layering)
  • 1 cup grated cheese (mozzarella or any melting cheese)
  • 2 oz / 70 g corn chips

Toppings

  • 1/2 avocado, diced
  • 1 large tomato, deseeded and diced
  • 1/4 Spanish (red) onion, diced
  • 2 tbsp lime juice (fresh or bottled)
  • 3 tbsp fresh coriander leaves
  • 1/2 tbsp olive oil
  • Salt and pepper to taste
  • Sour cream (to serve)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the nachos pie.
  2. Cook the Beef Mixture: Heat 1 tbsp olive oil in a skillet over medium heat. Add diced onion and minced garlic and sauté until translucent and fragrant. Add the ground beef and cook until browned. Stir in taco seasoning and black pepper. Pour in tomato passata and water, simmer for 10-15 minutes until the sauce thickens slightly. Stir in drained kidney beans and cook for another 5 minutes.
  3. Assemble the Pie: In a baking dish, layer soft tortillas followed by the beef and bean mixture, then sprinkle grated cheese. Repeat layers using all tortillas and mixture, finishing with a cheese layer on top. Scatter corn chips over the top for added crunch.
  4. Bake the Pie: Place the assembled dish in the preheated oven and bake for approximately 25-30 minutes until the cheese is melted and bubbly, and the top is slightly golden.
  5. Prepare the Toppings: While the pie bakes, combine diced avocado, deseeded diced tomato, diced red onion, lime juice, fresh coriander leaves, and olive oil in a bowl. Season with salt and pepper to taste to make a fresh salsa topping.
  6. Serve: Remove the nachos pie from the oven and let it cool slightly. Serve warm topped with the fresh avocado salsa and a dollop of sour cream on the side.

Notes

  • Note 1: You can make your own taco seasoning by mixing chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, and a pinch of cayenne pepper.
  • Note 2: Tomato passata can be substituted with pureed canned tomatoes for a similar consistency.
  • Note 3: Deseeding the tomato prevents extra moisture making the topping soggy.
