Ingredients
Scale
Wet Ingredients
- 2 large Eggs (beaten)
- 2 Tablespoons Sugar
- 2 1/4 cups Milk
- 3/4 cup Vegetable Oil
- 1/8 teaspoon Mint extract
- A few drops Green Food Coloring
Dry Ingredients
- 2 1/2 cups All-Purpose Flour
- 2 Tablespoons Baking Powder
- 1/2 teaspoon Salt
Add-ins and Toppings
- 1/2 cup Chocolate Chips
- Maple Syrup (for serving)
- Whipped Cream (optional, for serving)
- Chocolate Sprinkles (optional, for serving)
Instructions
- Prepare the wet ingredients: In a large bowl, mix the beaten eggs, sugar, milk, vegetable oil, chocolate chips, mint extract, and green food coloring gel. Stir everything thoroughly until combined, ensuring the mint flavor and color are evenly distributed.
- Mix the dry ingredients: In a separate bowl, combine the all-purpose flour, baking powder, and salt. Stir well to blend the leavening agents evenly throughout the flour.
- Combine wet and dry mixtures: Gradually add the dry ingredient mixture to the wet mixture in the large bowl, a little at a time. Stir well between additions to prevent lumps. The batter might remain slightly lumpy, which is normal for waffle batter.
- Cook the waffles: Preheat your waffle maker according to the manufacturer’s directions. When ready, pour about 3/4 cup of batter into the waffle maker and cook until the waffles are golden and crisp. Repeat until all batter is used, creating a stack of waffles. Butter each waffle as you remove it and plate them in groups of two or three.
- Serve with toppings: Drizzle the waffles with maple syrup and add whipped cream and chocolate sprinkles if desired. Serve immediately and enjoy your mint chocolate chip waffles!
Notes
- Adjust the amount of mint extract according to your taste preference; 1/8 teaspoon provides a subtle mint flavor.
- The green food coloring is optional but adds a fun, festive touch.
- If you prefer a sweeter waffle, add an extra tablespoon of sugar to the batter.
- Make sure not to overmix the batter to keep waffles light and fluffy.
- Leftover waffles can be stored in the refrigerator and re-crisped in a toaster or oven.
