Chicken:
- 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
Skillet Mixture:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup long-grain white rice, rinsed
- 2 ½ cups low-sodium chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup kalamata olives, pitted and halved
- ¼ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- juice of 1 lemon
Instructions
- Cook Chicken: Heat 1 tablespoon olive oil in a large skillet. Brown chicken for 5-6 minutes; set aside.
- Sauté Vegetables: Add remaining oil, onion, garlic, and bell pepper to the skillet. Sauté until softened.
- Add Rice and Spices: Stir in rice, oregano, paprika, cumin, salt, and pepper. Coat rice with spices.
- Cook: Pour in broth, bring to a simmer. Return chicken, cover, and simmer for 18-20 minutes.
- Finish: Stir in tomatoes and olives, cook for 2 minutes. Garnish with feta, parsley, and lemon juice.
Notes
- Consider using chicken breasts or adding spinach/zucchini for variation.
- For brown rice, increase broth to 3 cups and cook longer.
