Description

This Mediterranean Chicken & Rice Skillet is a flavorful one-pan meal that combines tender chicken, aromatic rice, and a variety of Mediterranean ingredients for a satisfying dinner.

Chicken:

  • 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces

Skillet Mixture:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup long-grain white rice, rinsed
  • 2 ½ cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup kalamata olives, pitted and halved
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • juice of 1 lemon


Instructions

  1. Cook Chicken: Heat 1 tablespoon olive oil in a large skillet. Brown chicken for 5-6 minutes; set aside.
  2. Sauté Vegetables: Add remaining oil, onion, garlic, and bell pepper to the skillet. Sauté until softened.
  3. Add Rice and Spices: Stir in rice, oregano, paprika, cumin, salt, and pepper. Coat rice with spices.
  4. Cook: Pour in broth, bring to a simmer. Return chicken, cover, and simmer for 18-20 minutes.
  5. Finish: Stir in tomatoes and olives, cook for 2 minutes. Garnish with feta, parsley, and lemon juice.

Notes

  • Consider using chicken breasts or adding spinach/zucchini for variation.
  • For brown rice, increase broth to 3 cups and cook longer.
