Ingredients
Scale
Fish
- 4 pieces of cod fillets, approximately 6 ounces each
Olive Mixture
- 1/4 cup extra-virgin olive oil, divided
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved
- 1 lemon, thinly sliced
Seasonings and Garnish
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the cod fillets.
- Prepare Baking Dish: Drizzle 2 tablespoons of olive oil evenly in a large baking dish to prevent sticking and add flavor.
- Arrange Cod Fillets: Place the cod fillets in the baking dish, ensuring they are evenly spaced apart for even cooking.
- Mix Toppings: In a bowl, combine minced garlic, halved cherry tomatoes, pitted and halved kalamata olives, and lemon slices. Drizzle the remaining olive oil over the mixture and toss to coat everything evenly.
- Top Cod: Spread the tomato and olive mixture over and around the cod fillets in the baking dish to infuse flavors during baking.
- Season: Sprinkle dried oregano and red pepper flakes over the entire dish. Add salt and freshly ground black pepper to taste to enhance the flavors.
- Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Rest: Remove the baking dish from the oven and let it rest for a couple of minutes to allow the flavors to settle.
- Garnish and Serve: Garnish the baked cod with freshly chopped parsley before serving for a fresh, aromatic finish.
Notes
- Ensure to not overcook the cod to keep it moist and tender.
- You can substitute kalamata olives with green olives if desired.
- Serve with crusty bread or a side of steamed vegetables for a complete meal.
- Adjust red pepper flakes according to your preferred spice level.
- Use fresh lemon slices for brightness and acidity; you can add lemon zest for extra flavor.
