Olive Mixture

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and halved
  • 1 lemon, thinly sliced

Seasonings and Garnish

  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the cod fillets.
  2. Prepare Baking Dish: Drizzle 2 tablespoons of olive oil evenly in a large baking dish to prevent sticking and add flavor.
  3. Arrange Cod Fillets: Place the cod fillets in the baking dish, ensuring they are evenly spaced apart for even cooking.
  4. Mix Toppings: In a bowl, combine minced garlic, halved cherry tomatoes, pitted and halved kalamata olives, and lemon slices. Drizzle the remaining olive oil over the mixture and toss to coat everything evenly.
  5. Top Cod: Spread the tomato and olive mixture over and around the cod fillets in the baking dish to infuse flavors during baking.
