Instructions

  1. Preheat Oven: Preheat your oven to 500°F (260°C). If using a pizza stone, place it in the oven to warm for about 30 minutes to ensure a crispy crust.
  2. Cook Sausage: In a large skillet over medium-high heat, cook the Italian sausage until it turns light brown and is no longer pink inside, about 3 minutes. Break the sausage into smaller pieces as it cooks. Drain excess fat and transfer the sausage to a plate lined with paper towels.
  3. Cook Pancetta or Bacon: Using the same skillet, cook the diced pancetta or bacon until golden brown, approximately 2 minutes. Transfer to a paper towel-lined plate to drain excess fat and set aside.
  4. Prepare Dough: Roll out or gently stretch the pizza dough into a large circle. If you do not have a pizza stone, place the dough on a baking sheet lined with parchment paper. If you have a pizza stone, lightly dust a pizza peel with semolina flour and place the dough on it for easier transfer to the stone.
  5. Add Sauce: Spread the marinara or pizza sauce evenly over the dough, leaving about an inch border around the edges free of sauce to allow the crust to rise nicely.
