Mac and Cheese Bites:
- 2 cups elbow macaroni, uncooked
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 ½ cups shredded sharp cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 large egg, beaten
- ½ cup seasoned breadcrumbs
- nonstick cooking spray or oil for greasing
Instructions
- Cook the macaroni: Boil macaroni until al dente, drain, and set aside.
- Make the cheese sauce: Melt butter, whisk in flour, add milk, cheeses, garlic powder, salt, and pepper. Stir in cooked macaroni.
- Add egg and bake: Mix in beaten egg, spoon mixture into greased mini muffin tins, top with breadcrumbs, and bake at 375°F (190°C) for 15–18 minutes.
- Serve: Let cool slightly before removing from pan and serving warm.
Notes
- For extra crispiness, broil the bites at the end of baking.
- You can make ahead and reheat in the oven or air fryer.
- Enhance with cooked bacon or jalapeños for added flavor.
