  • 3 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar (for blueberry filling)

Lemon Cream Cheese Glaze:

  • 4 ounces cream cheese, softened
  • ¾ cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. Dough: In a large bowl, mix 2 ¼ cups flour, sugar, salt, and yeast. In a separate bowl, whisk warm milk, water, melted butter, egg, vanilla, and lemon zest. Combine wet and dry ingredients, stirring until a sticky dough forms. Gradually add the remaining flour until the dough pulls away from the bowl. Knead the dough on a floured surface for about 5–7 minutes, or until smooth and elastic. Transfer to a greased bowl, cover, and let rise in a warm place for 1 to 1 ½ hours, or until doubled in size.
  2. Filling: Prepare the filling by combining blueberries, cornstarch, lemon juice, and sugar in a small saucepan. Cook over medium heat until thickened and bubbly. Remove from heat and let cool completely.
  3. Assembly: Once dough has risen, punch it down and roll into a 10×14-inch rectangle. Spread the blueberry mixture evenly over the dough, leaving a ½-inch border. Carefully roll the dough into a log, starting from the longer edge. Slice into 9 rolls and place in a greased 9-inch square baking dish. Cover and let rise again for 30–45 minutes.
  4. Baking: Preheat the oven to 350°F. Bake rolls for 25–30 minutes or until lightly golden and cooked through.
  5. Glaze: While rolls bake, beat cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla until smooth. Spread glaze over warm rolls before serving.

Notes

  • You can use frozen blueberries, but don’t thaw them before cooking.
  • For a stronger lemon flavor, add more zest to the glaze or filling.
