- Prepare Lemons: Wash the lemons thoroughly and slice them thinly, making sure to remove any seeds to avoid bitterness in the jam.
- Cook Lemons: Place the lemon slices in a large pot with 1/4 cup of water. Cook over medium heat until the lemons soften, which should take about 15 minutes, stirring occasionally.
- Add Sugar and Boil: Add the 4 cups of granulated sugar to the pot and bring the mixture to a boil. Stir frequently to dissolve the sugar completely and ensure even cooking.
- Simmer to Thicken: Reduce the heat to low and simmer the mixture for 45 minutes to an hour. Stir frequently to prevent sticking and allow the jam to thicken to your desired consistency.
- Add Flavorings: For enhanced flavor, optionally stir in 1/4 teaspoon of vanilla extract or 1 tablespoon of lemon juice during the last few minutes of cooking.
