Description

Truffle Mixture:

  • 12 oz white chocolate, finely chopped
  • 1/4 cup heavy cream
  • 1 tablespoon honey
  • 1 teaspoon dried culinary lavender
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, softened

Coating:

  • powdered sugar or additional melted white chocolate for coating (optional)

Instructions

  1. Prepare the Infused Cream: In a small saucepan, heat the heavy cream, honey, and dried lavender over medium heat until it just begins to simmer. Remove from heat, cover, and let steep for 10 minutes.
  2. Make the Ganache: Strain the cream to remove the lavender, then return the cream to the pan. Add the chopped white chocolate and softened butter to a heatproof bowl. Reheat the strained cream gently until hot, then pour it over the white chocolate and butter. Let sit for 1–2 minutes, then stir gently until smooth and fully melted. Stir in the vanilla extract.
  3. Chill and Shape: Cover and refrigerate the mixture for at least 2 hours or until firm. Once chilled, scoop small amounts of the ganache and roll into balls using your hands.
  4. Coat the Truffles: If desired, roll in powdered sugar or dip in melted white chocolate to coat. Chill again until set. Store in the refrigerator in an airtight container.
