Seafood
- 2 salmon fillets
- 1/2 lb shrimp, peeled and deveined
Honey Garlic Sauce
- 3 tablespoons honey
- 3 tablespoons soy sauce
- 3 cloves garlic, minced
Cooking Fats & Seasonings
- 1 tablespoon olive oil (for cooking)
- 1 tablespoon butter (for cooking)
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Garlic Butter Rice
- 1 cup jasmine rice (or your preferred rice)
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth (or water)
- Salt, to taste
Instructions
- Prepare Garlic Butter Rice: In a medium pot, melt 2 tablespoons of butter over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute until aromatic and fragrant.
- Add Rice: Stir in 1 cup of jasmine rice, coating the grains evenly with the garlic butter mixture.
- Cook Rice: Pour in 2 cups of chicken or vegetable broth (or water) and season with salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed. Remove from heat and fluff rice with a fork.
- Make Honey Garlic Sauce: In a small bowl, mix 3 tablespoons honey, 3 tablespoons soy sauce, and 3 cloves minced garlic until combined.
- Heat Skillet: Warm a large skillet over medium-high heat and add 1 tablespoon olive oil and 1 tablespoon butter.
- Season Seafood: Season the salmon fillets and shrimp with salt and pepper on both sides.
- Cook Salmon: Place salmon fillets skin-side down in the skillet. Cook for 4-5 minutes on each side or until the salmon flakes easily with a fork. Remove salmon from skillet and set aside.
- Cook Shrimp: In the same skillet, add shrimp and cook for 2-3 minutes per side until they turn pink and are opaque.
- Add Sauce and Simmer: Reduce heat to low. Pour the honey garlic sauce over the salmon and shrimp, tossing gently to coat evenly. Simmer for 2-3 minutes until sauce thickens slightly.
- Serve: Place the cooked garlic butter rice on plates and top with the honey garlic salmon and shrimp. Garnish with chopped fresh parsley before serving.
Notes
- You can substitute the jasmine rice with basmati or long-grain rice if preferred.
- For a low-sodium option, use low-sodium soy sauce and reduced-sodium broth or water.
- Shrimp size can vary; adjust cooking time accordingly to avoid overcooking.
- If you prefer a thicker sauce, simmer a little longer, or add a cornstarch slurry to help thicken.
- This dish pairs well with steamed vegetables such as broccoli or asparagus.
