Description

These Hawaiian Roll Breakfast Sandwiches are a delightful morning treat featuring sweet, soft rolls layered with savory scrambled eggs, crispy bacon or sausage, melted cheddar cheese, and a tangy, honey-mustard mayo spread. Perfectly baked to meld the flavors together, they make a crowd-pleasing breakfast or brunch option that’s easy to prepare and enjoy.

Ingredients

Scale

Sandwiches

  • 12 Hawaiian rolls, sliced in half
  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 12 slices of cooked bacon or sausage patties
  • 8 slices of cheddar cheese
  • 2 tablespoons butter

Spread

  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the sandwiches later.
  2. Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Cook Scrambled Eggs: Heat a large non-stick skillet over medium heat and add the butter. Once melted, pour in the egg mixture and stir gently with a spatula until the eggs are scrambled and just set. Remove from heat to prevent overcooking.
  4. Make Spread: In a small bowl, combine mayonnaise, Dijon mustard, and honey, mixing thoroughly to create a sweet and tangy spread.
  5. Assemble Sandwiches: Arrange the bottom halves of the Hawaiian rolls in a 9×13 inch baking dish. Spread the honey-mustard mayo evenly over each roll base, then layer with cooked bacon or sausage patties, scrambled eggs, and cheddar cheese slices. Place the top halves of the rolls on top.
  6. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 10-12 minutes, until the cheese melts and the sandwiches are warmed through.
  7. Garnish and Serve: Remove from oven, sprinkle with chopped fresh chives if desired, and serve warm for a delicious breakfast experience.

Notes

  • You can substitute sausage patties with turkey bacon or plant-based sausage for different dietary preferences.
  • Make ahead option: Assemble sandwiches, cover, and refrigerate overnight; bake in the morning for a quick breakfast.
  • Adding fresh chives is optional but adds a nice color and flavor boost.
  • Adjust salt and pepper according to taste in the egg mixture.
