Description

These Grilled Shrimp Kebabs are a perfect combination of smoky, tangy, and savory flavors, featuring large shrimp marinated in a zesty blend of garlic, lemon juice, and spices, then grilled alongside vibrant bell peppers and red onion. Ideal for a quick and healthy Mediterranean-inspired meal, these kebabs cook in just minutes, making them perfect for summer grilling or any easy dinner occasion.

Ingredients

Scale

Shrimp Marinade

  • 1 ½ pounds large shrimp, peeled and deveined with tails on
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Vegetables and Skewers

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into chunks
  • Wooden or metal skewers

Instructions

  1. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
  2. Make Marinade: In a large bowl, whisk together olive oil, minced garlic, lemon juice, smoked paprika, ground cumin, salt, and black pepper to create a flavorful marinade.
  3. Marinate Shrimp: Add the peeled and deveined shrimp to the marinade. Toss well to coat all shrimp evenly. Cover and refrigerate for 15 to 30 minutes to allow the flavors to infuse.
  4. Assemble Kebabs: Thread the marinated shrimp alternately with pieces of red bell pepper, yellow bell pepper, and red onion onto the soaked or metal skewers, creating colorful kebabs.
  5. Preheat Grill: Heat your grill to medium-high and lightly oil the grates to prevent sticking.
  6. Grill Kebabs: Place the skewers on the grill, cooking for 2 to 3 minutes per side. Grill until shrimp turn opaque and develop slight char marks, indicating they are perfectly cooked.
  7. Serve: Remove from grill and serve hot. Optionally, squeeze fresh lemon juice over the kebabs for an extra burst of brightness.

Notes

  • Add zucchini or cherry tomatoes to the skewers for additional color and flavor variety.
  • Metal skewers do not require soaking and are reusable, offering convenience.
  • These kebabs pair wonderfully with sides like rice, couscous, or a fresh green salad for a complete meal.
