Description

This Grilled Chicken & Broccoli Bowls recipe combines tender, juicy grilled chicken breasts with crisp-tender roasted broccoli and a bed of cooked grains like rice or quinoa. Topped with a rich, creamy garlic sauce made with butter, heavy cream, and fresh garlic, this balanced meal is both satisfying and flavorful. Garnished with fresh parsley or chives, it’s perfect for a wholesome lunch or dinner.

Ingredients

Scale

Protein & Vegetables

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets

Grains

  • 1 cup cooked grains (rice, quinoa, couscous, etc.)

Sauce Ingredients

  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 tablespoons butter

Seasonings & Oils

  • 2 tablespoons olive oil, divided
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Grill the Chicken: Season chicken breasts with 1 tablespoon olive oil, salt, pepper, and any optional spices you prefer. Preheat your grill to medium-high heat, then place chicken on the grill. Cook for about 6–8 minutes per side, flipping once, until the chicken is cooked through and reaches an internal temperature of 165°F. The chicken should be lightly charred on the outside.
  2. Roast the Broccoli: Preheat your oven to 400°F. Toss broccoli florets with 1 tablespoon olive oil, lemon juice, and a pinch of salt. Spread them evenly on a baking sheet and roast for 15–20 minutes, until the broccoli is crisp-tender and slightly browned on the edges.
  3. Cook the Grains: Prepare your choice of grains according to the package instructions. Once cooked, fluff the grains with a fork and keep warm while you prepare the other components.
  4. Make the Creamy Garlic Sauce: In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1–2 minutes until fragrant and lightly golden. Stir in the heavy cream, then season with salt and black pepper to taste. Simmer the sauce gently, stirring occasionally, until it thickens slightly, about 3–5 minutes.
  5. Assemble the Bowls: Divide the cooked grains evenly between two bowls. Slice the grilled chicken breasts and arrange them over the grains. Add the roasted broccoli on the side. Drizzle the creamy garlic sauce generously over the chicken and broccoli. Garnish with fresh parsley or chives if desired, and serve immediately.

Notes

  • You can swap the grains for cauliflower rice to reduce carbs.
  • Feel free to add your favorite spices like smoked paprika or Italian seasoning to the chicken for more flavor.
  • The creamy garlic sauce can be made ahead and reheated gently.
  • Make sure not to overcook the broccoli to maintain its crispness.
  • Use a meat thermometer to ensure chicken reaches safe internal temperature without drying out.
