Description

A refreshing Greek Tortellini Pasta Salad featuring cheese tortellini, fresh vegetables, kalamata olives, and crumbled feta cheese, all tossed in a zesty homemade Mediterranean dressing. Perfect as a light side dish or a satisfying vegetarian meal, this salad is chilled to meld flavors beautifully.

Ingredients

Scale

Pasta Salad

  • 1 (20 oz) package cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, thinly sliced
  • 3/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook Tortellini: Cook the cheese tortellini according to package directions until al dente. Drain and rinse under cold water to cool, which stops the cooking process and prepares the pasta for salad.
  2. Prepare Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and black pepper until the dressing is well emulsified.
  3. Combine Ingredients: In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, diced cucumber, sliced kalamata olives, chopped red bell pepper, thinly sliced red onion, and crumbled feta cheese.
  4. Toss Salad: Pour the prepared dressing over the salad ingredients and toss thoroughly until everything is evenly coated with the dressing.
  5. Garnish and Chill: Sprinkle the chopped fresh parsley over the salad. Cover and chill for at least 30 minutes to allow the flavors to meld for the best taste experience before serving.

Notes

  • This salad can be made up to one day in advance, making it ideal for meal prep or gatherings.
  • For a heartier meal, add grilled chicken on top to increase protein content.
  • Try using spinach tortellini for a unique flavor twist.
  • To make this salad dairy-free, opt for vegan tortellini and dairy-free feta alternatives.
