Description

Garlic Herb Roasted Veggies is a simple, flavorful side dish featuring tender baby potatoes, sweet baby carrots, and fresh green beans roasted to perfection with garlic, Italian herbs, and smoked paprika. This easy roasted vegetable medley is perfect for weeknight dinners or holiday meals, delivering a healthy boost with beautiful color and irresistible aroma.

Ingredients

Scale

Vegetables

  • 1 lb baby potatoes (red or gold), halved
  • 1 cup baby carrots (or sliced regular carrots)
  • 1 cup fresh green beans, trimmed

Seasonings and Oils

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Garnish

  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to ensure easy cleanup after roasting.
  2. Season Potatoes and Carrots: In a mixing bowl, toss the halved baby potatoes and baby carrots with 1 tablespoon of olive oil, minced garlic, dried Italian seasoning, smoked paprika, salt, and black pepper to evenly coat the vegetables with the flavorful seasoning blend.
  3. Roast Potatoes and Carrots: Spread the seasoned potatoes and carrots in a single layer on the prepared baking sheet. Roast them in the preheated oven for 25 minutes, flipping or stirring halfway through to promote even browning and cooking.
  4. Prepare the Green Beans: While the potatoes and carrots roast, toss the trimmed green beans in a small bowl with the remaining 1 tablespoon of olive oil and a pinch of salt to season.
  5. Add Green Beans and Continue Roasting: After the initial 25 minutes of roasting, add the green beans to the baking sheet with the other vegetables. Return the baking sheet to the oven and roast for an additional 10-15 minutes until all the vegetables are tender, slightly crispy, and nicely caramelized.
  6. Garnish the Roasted Veggies: Remove the baking sheet from the oven. Sprinkle the roasted vegetables with freshly chopped parsley and, if desired, a pinch of red pepper flakes for a bit of heat and extra flavor.
  7. Serve: Serve the garlic herb roasted veggies warm as a delicious and nutritious side dish to complement your favorite main course.

Notes

  • For even cooking, try to cut potatoes into similar-sized pieces.
  • You can substitute Italian seasoning with fresh herbs like rosemary and thyme if preferred.
  • Red pepper flakes are optional and can be adjusted based on your preferred spice level.
  • This dish pairs well with roasted chicken, grilled meats, or plant-based mains.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
