Ingredients
Scale
Mushrooms
- 500g / 1lb mushrooms (button, Swiss brown/cremini, or 8 large portabello mushrooms)
Seasoning and Sauce
- 50g / 3 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 2 garlic cloves, finely minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 tbsp lemon juice
- 1 tsp fresh thyme leaves (or parsley for color)
Instructions
- Preheat Oven: Set your oven to 220°C/450°F (200°F fan) to ensure it is hot enough for roasting the mushrooms to a perfect golden brown.
- Prepare Mushrooms: In a large bowl, combine the mushrooms with the melted butter, olive oil, finely minced garlic, salt, and pepper. Use a rubber spatula to gently toss until the mushrooms are evenly coated with the mixture.
- Roast Mushrooms: Spread the coated mushrooms out evenly on a baking tray in a single layer. Place the tray in the oven and roast for 25 minutes without tossing or turning, allowing the mushrooms to caramelize beautifully.
- Add Lemon and Herbs: Remove the mushrooms from the oven. Gather them to one side of the baking tray and drizzle with lemon juice. Sprinkle fresh thyme leaves over the mushrooms and toss gently to combine flavors evenly.
- Serve Immediately: Transfer the mushrooms to a serving dish and enjoy while warm as a delightful side to your favorite main course.
Notes
- Use cremini or portabello mushrooms for a meatier texture and richer flavor.
- Do not toss mushrooms during roasting to allow proper caramelization.
- Fresh thyme can be substituted with parsley for a different herbal note and color.
- Adjust salt and pepper to taste if desired.
- Serve as a side dish for grilled meats, roasted chicken, or as a topping for steaks and salads.
