Using fresh white sandwich bread as the base, each mini pizza is loaded with garlic butter, pizza sauce, fresh vegetables, cheese, and pepperoni, all baked to golden perfection in a muffin tin for individual servings.

Base and Garlic Butter
- 12 slices fresh white sandwich bread
- 2 tbsp butter
- 2 garlic cloves, crushed
- 1/8 tsp salt
Toppings
- 1/2 cup pizza sauce
- 1/4 cup finely diced red onion
- 1/3 cup finely chopped mushrooms
- 3/4 cup grated melting cheese (mix of mozzarella and tasty cheese, equal amounts)
- 1/4 cup sliced small pepperoni
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the mini pizzas.
- Cut Bread Rounds: Use an empty large can (800g/28oz canned tomato can) to cut out circular rounds from the slices of white sandwich bread.
- Mould Bread in Muffin Tin: Press each bread round into the cups of a muffin tin, shaping them to form a small bread ‘cup’ for the toppings.
- Prepare Garlic Butter: In a microwave-safe bowl or mug, combine butter, crushed garlic, and salt, microwaving in 30-second increments until the butter is fully melted.
- Brush Bread Cups: Generously brush the garlic butter over the bread cups, making sure to include the crushed garlic.
- Add Sauce and Vegetables: Spoon the pizza sauce evenly into each bread cup, then top with finely diced red onions and chopped mushrooms.
- Top with Cheese and Pepperoni: Sprinkle the grated cheese mixture over the vegetables, then place slices of pepperoni on top.
- Bake: Bake the mini pizzas in the preheated oven for 10 to 15 minutes, until the cheese is melted and bubbly, and the edges of the bread turn golden brown.
- Serve Warm: Remove from oven and serve the garlic bread mini pizzas warm for the best taste and texture.
