Description

Frito Corn Salad is a quick, no-cook, creamy and crunchy dish combining mayonnaise, sour cream, ranch dressing, cheddar cheese, corn, green chilies, green onions, and Fritos corn chips for a flavorful, party-ready side or snack.

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 packet ranch dressing mix

  • 1 cup green onions, chopped

Crunch Component

  • 1 bag (9 ounces) Fritos corn chips


Instructions

  1. Combine Mayonnaise and Sour Cream: In a large mixing bowl, mix together 1 cup of mayonnaise and 1/2 cup of sour cream until smooth and well blended.
  2. Add Ranch Dressing Mix: Stir in 1 packet of ranch dressing mix thoroughly into the mayo-sour cream mixture.
  3. Incorporate Cheddar Cheese: Add 1 cup of shredded cheddar cheese and stir until evenly distributed throughout the mixture.
  4. Add Corn: Drain 1 can (15 ounces) of corn and gently stir it into the bowl with the other ingredients.
  5. Mix in Green Chilies: Drain 1 can (4 ounces) of green chilies and add them to the bowl, mixing evenly with the corn and cheese mixture.
  6. Add Green Onions: Chop 1 cup of green onions and stir them into the salad to combine all flavors.
  7. Prepare Fritos: Open a 9-ounce bag of Fritos corn chips and gently crush them into smaller pieces without turning them into crumbs.
  8. Add Fritos to Salad: Carefully fold the crushed Fritos into the salad, ensuring the chips maintain some texture and are evenly mixed.
  9. Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to let the flavors meld.
  10. Final Stir Before Serving: Gently stir the chilled salad to redistribute ingredients that may have settled.
